Avocado Tartines with Smashed Peas and Feta
1 tub of Simply Delish Avocado with Lime and Sea Salt; 250gm of peas, thawed if frozen; 200g feta cheese, crumbled; Zest and juice of 1 lemon; 1 garlic clove, peeled; 6 slices of sourdough bread.
To serve: Micro-herbs and flaked salt.
1 Place the peas in a bowl and mash lightly with a fork. Add the crumbled feta, lemon zest, 1 tbsp of juice and the olive oil, stirring to combine. Season with salt and pepper then set aside.
2 Brush the bread with oil and then grill until toasted. Rub each slice of toast with the garlic clove. Spread a generous amount of the Simply Delish Avocado with Lime and Sea Salt dip over each slice and then pile the pea and feta mixture on each slice, drizzle olive oil and finish with flaked salt and micro-herbs.
