2 cloves of garlic, crushed;
1/2 tub of Simply Delish Chilli Red;
1 tsp salt;
1 tbsp palm sugar;
125ml olive oil;
500gm chicken wings;
500gm chicken drumsticks;
5 garlic cloves, crushed;
1 red onion, sliced;
1 dried chilli, soaked in hot water for 20 minutes;
2 tomatoes, roughly chopped;
1 red capsicum, roughly chopped;
1 tsp of palm sugar;
1/2 tub of Simply Delish Chilli Red dip;
1/2 lime, juiced;
To serve: 1 lime, cut into wedges, plain potato crisps.
Combine the garlic, Simply Delish Chilli Red, salt, sugar and olive oil in a bowl and stir to combine. Add the chicken pieces and stir to coat. Cover and place in the fridge to marinate for 3-4 hours.
Meanwhile for the salsa, fry the garlic, onion and dried chilli until fragrant. Add the tomato, capsicum and palm sugar then sauté until softened. Remove from the heat and place in the blender with the Simply Delish Chilli Red dip, and blend until smooth. Check for seasoning and then return the mixture to the pan and allow to reduce into a thick sauce. Remove from heat and once cool season with the lime juice.
Preheat the oven to 180C. Remove the chicken from the fridge and arrange on a baking tray, ensuring they are well coated with the marinate. Cook for 30-40 minutes, or until beginning to turn golden and charred.
Arrange the chicken on a serving plate with limes wedges, potato crisps and salsa on the side to dip.
